Market Street Meat Loaf-Silver Palate The New Basics

Venice beaches 72 Market Street original recipe:



From the Silver Palate..72 Market Street Meatloaf..Venice, CA -This recipe makes two medium-sized loaves. I like to eat one and freeze the other. The leftovers are fabulous.

Items

3 Tb unsalted butter
3/4 cup finely-chopped onion
3/4 cup chopped scallions, white bulb and three inches green (the bottom part)
1/2 cup finely chopped carrots
1/2 cup finely chopped celery
1/4 cup finely chopped green pepper
1/4 cup finely chopped red pepper
2-3 tsp minced garlic
salt (to taste, at least 1 tsp)
1 tsp freshly-ground black pepper
1/2 tsp white pepper
1/4 tsp cayenne pepper
1/2 tsp paprika
1 tsp ground cumin
1/2 tsp freshly-grated nutmeg
3 eggs, well-beaten
1/2 cup ketchup
1/2 cup cream or half-and-half
1 lb ground chuck, 1 lb ground veal, and 1 lb ground pork
1 cup fine fresh bread crumbs, toasted

Method

Melt the butter in a large sautée pan over medium heat, and cook the veggies and aromatics (everything up to and including the garlic) until most of the moisture is evaporated, around 10 minutes. The point here is to cook the veggies and get rid of their extra moisture.

Remove from the heat, place in a medium-size bowl, and stash in the freezer to cool down rapidly, at least 10 minutes. You can do this while you’re working on the rest of the dish. Maybe now is the time to make a gin and tonic?

In a large bowl (big enough to hold the meat and knead it), beat the eggs with the spices, cream, and ketchup until well-combined.


Place the meat on top, along with the bread crumbs and cooled veggies. With your hands knead everything together, about five minutes. If at the end of the kneading the mixture seems a little loose, add some more bread crumbs. If desired, top with more ketchup, or ketchup and Worcestershire sauce.

Divide and place into two 8-inch loaf pans. Set in the fridge to rest for 30 minutes.
Preheat the oven to 375F. Place each of the loaf pans in a larger baking dish, and fill the larger baking dish with an inch or so of water. Place both on the middle rack of your oven.
Bake for 35-40 minutes, swapping and rotating the loaf pans about half way through baking to ensure even cooking. Rest for 15 minutes or so before slicing and serving.
Serves a bunch (10 good-sized slices per loaf, or 20 slices total)

I completely redid this very same post twice and the block showed up both times. I fooled around with this for two hours lastnight to no avail, and today it's fine, same exact post. Throw Back Thursday Rock and Roll Style

Time, it has a way of flying by.  I remember being young and the "older" people use to say how fast time went by when you got older.  Being the young whipper snapper I was, I thought they were exaggerating. Turns out the joke was on me. time, it flies by. Here are a few mile stones that seem like they happened just yesterday:


32 years ago today we got MTV!!!
"On Saturday, August 1, 1981, at 12:01 a.m., MTV launched with the words "Ladies and gentlemen, rock and roll," spoken by John Lack, and played over footage of the first Space Shuttle launch countdown of Columbia, which took place earlier that year, and of the launch of Apollo 11. Those words were immediately followed by the original MTV theme song, a crunching classical tune composed by Jonathan Elias and John Petersen, playing over photos of the Apollo 11 moon landing, with the flag featuring MTV's logo changing various colors, textures, and designs. MTV producers Alan Goodman and Fred Seibert used this public domain footage as a conceit. Seibert said they had originally planned to use Neil Armstrong's "One small step" quote, but lawyers said Armstrong owns his name and likeness, and Armstrong had refused, so the quote was replaced with a beeping sound.

The first music video shown on MTV was The Buggles' "Video Killed the Radio Star", and the second music video shown was Pat Benatar's "You Better Run".

And 42 years ago today the first major benefit concert was played in New York City's Madison Sqaure. Produced by George Harrison and featured Bob Dylan, Eric Clapton, Billy Preston, Leon Russell and BadFinger.



And last but not least, if Jerry Garcia was still with us he would have been 71 years old today. Happy birthday Jerry, you live on and are always with us through your music!

It's A Wrap Everybody!

This weekend came and went pretty much like all the others, super fast.    It was nice and relaxing and we celebrated our beautiful birthday girls, Juliana's 16th and Emilee's 18th!  Jim and I will get cozy now and close the night with watching our favorite HBO show The Newsroom.

Sunday's Do Go Best With Bacon


Yes I did Bouvie baby! BLT's and don't forget the the Best Foods.  Mayo is the magic to a wonderful BLT and so are the tomatoes.  Speaking of tomatoes, preferable vine ripened, this is a delicious and decadent recipe to make with ripe to perfection tomatoes and fresh basil.  No bacon but lots of bri cheese. A wonderful summer dish from the Silver Palette Cook book which has been my bible for over 20 years, and the pages show it:
My copy, worn and yellowed, (like me!) It was on sale on their tenth birthday, I think they just celebrated their 30th birthday..here's the recipe:

Servings: Serves 4–6
Ingredients
  • 4 large ripe tomatoes , cut into 1/2-inch cubes
  • 1 pound Brie , rind removed, torn into irregular pieces
  • 1 cup fresh basil leaves , rinsed, patted dry and cut into strips
  • 3 cloves garlic , peeled and finely minced
  • 1 cup plus 1 Tbsp. best-quality olive oil
  • 1/2 tsp. salt , plus additional to taste
  • 1/2 tsp. freshly ground black pepper
  • 1 1/2 pounds linguine
  • Freshly grated Parmigiano-Reggiano cheese , for garnish (optional)
Directions
At least 2 hours before serving, combine the tomatoes, Brie, basil, garlic, the 1 cup olive oil, and 1/2 teaspoon each salt and pepper in a large serving bowl. Bring 6 quarts salted water to a boil in a large pot. Add 1 tablespoon olive oil and the linguine, and boil until tender but still firm, 8 to 10 minutes.

Drain the pasta and immediately toss with the tomato sauce. Serve at once, passing the peppermill, and the grated Parmigiano-Reggiano cheese, if you like.

Since we're in the kitchen. I came across this today! 
Awww, there are some advatanges to being an only child now. Our beloved lab Normie did this, and The Bud never attempted since Norman was alpha and with Marty, this wasn't allowed with either pup since The Big Guy weighed over 100 pounds...but, The little Bud has figured out it's his turn now :)
And a couple weekends ago this was going on out my kitchen window..of course I had to grab my phone and run outside and have Juliana do it again and again and again!
...sorry, I don't know how to turn the video around :(

Not me though. I've already made homemade three bean chile to go over baked potatoes, lamb chops are marinating in Jim's homemade BBQ sauce and I'll saute some fresh from my friend Alice's garden zucchini with red bell pepper, onion and garlic in olive oil. A secret to great tasting chile, add a little dill.   It's national Ice Cream day, my favorite holiday so a drive in my new car will be in order.  Happy Sunday!

Things That Make Me Go Bouve

I see plenty of things on the internet and Facebook that make go Hmmmm...but here's a few things that make me go Bouve:

Or this wonderful film and if you've never seen it, you should. The beginning is sad, but the movie is wonderful.  The Bouve is a great actor. So's the little boy



And not to worry about the beginning where it looks like the dog is getting beat..NO Bouvie would be passive if it was threaten.  We have a company that comes out and helps with our gopher control every couple of weeks and it's always the same two gentleman and Marty knew them well.  One day Brian and I are talking outside and Marty is with me and all of sudden Marty jumps up and nips Brian's waist..we both look puzzled and Marty does it again. Turned out he was wearing a sheath with a tool in that he never wore before and Marty noticed it, and didn't like that he had it-Marty was nipping at it to tell Brian to get rid of it. It was something Marty hadn't seen on him before and he was looking out for me.  NOTHING gets by the watchful eye of a Dog of Flanders.





And who can resist both children and Bouves!  Turns out these are all pup's from my Bouvier groups (I came across this on YouTube, I hope it's ok to repost. I guess if it's post on Youtube, it free game)
 I posted this on my FB page already because it reminds so much of Mar-Mar when I'd be sitting on "his" couch. Yes, Marty had his own couches :)  One upstairs and the wicker love seats on the patio. He wasn't allowed on the couch in the family room..leather, he'd puncture it!

Oh, and this picture, just cuz it's bad ass!
 Although Marty wasn't bugged by anything, except this high pitched noise Jim use to do to him that would send Marty straight in to my lap scared lol You know what, now that I think about it, the sound was kinda like a bicycle pump..big baby boy

Ok, these two pictures are funny and I saved them for a post. The picture on the top was showing up on my Facebook page daily as a page I might like to "like!"  No, it wasn't a page to my liking so I kept reporting and hiding it. This went on for what seemed like forever (days at least)..but then I guess the powers of be at In Your Facebook got the message...I wasn't buying what they were selling, so the they decided to bring out the big gun..The Zesty Italian!  And wouldn't ya know, suddenly I was in the mood for a mixed green salad!


...and since we're on the subject of Zesty men, yes, "dat right there" is a picture of my two favorite gym rats also being saved on my desk top for a future post..but DAMN! who could wait to show these two off.. my guys clean up NICE! Congrats Hodge Twins! Glad to see you two making "all kinz of gains".
